Stored Pressure, 'Wet Chemical', Fire Extinguisher with mounting bracket Wet chemical extinguishers are a relatively new development of old ideas and it is surprising that  the idea has not earlier been exploited! Designed particuarly for dealing with Fat-fryer and oil fires, in kitchens, these extinguishers are able to offer all the heat absorbing properties of water but without the dangers of water/oil emulsions causing large and dangerous conflagration! We all kinow that pouring water on a fat or oil fire is dangerous. The incident water will boil on contact with buring fat and an flammable aerosol will rise in the air - mostly commonly igniting, with disasterous result. And yet we know that water is the best, common extinguishing agent for removing heat and so removing the chance of auto-ignition, after flames have been put-out. But what if we could prevent the oil emusifying in to this steamy, flammable aerosol?  Wet Chemical (potassium acetate, carbonate, or citrate) extinguishes the fire by forming a soapy, foam blanket over burning oils and then cooling the oil to below its ignition temperature. Wetting Agents; Detergent based additives; are used to break the surface tension of water and improve penetration of Class A fires. Antifreeze Chemicals added to water to lower its freezing point to about −40 °F. but this has little effect on extinguishing performance. Generally, wet chemical extinguishers are only useful against fire classes A and K (F in Europe), although newer models are fitted with misting nozzles, similar to those used on water mist units, to give the extinguishers class B and C firefighting capability. Misting nozzles aim to deliver water particles less than 10 microns in diametre, so that a cooling mist is directed at the fire base. The mist boils, on contact with hot, heat sources and the water vapour condenses elswhere, so transferring the heat way, harmlessly. In fact, each gramme of boiled water removed 132 calories from the fire - many times more than all other, common extinguishing media. By weight in solution, relatively little detergent and salts need be added to the water for good effect. The chemicals help break the surface tension of the water, safely allowing it to emusify with hot fat, before it has chance to boil off. Thus, water aided by these chemicals, can be safely used to extinguish fires without risk of casuing a flammable cloud of steam and hot oil.
